Apfelschaumtorte und Marmorkuchen - Apple foam tart and Marble cake
Heute war bei uns Backtag und wir haben eine Apfelschaumtorte und einen Marmorkuchen gemacht. Für alle, die die Torte nachbacken möchte, habe ich das Rezept dazugeschrieben.
Today we had our baking day and we made an apple foam tart and a marble cake. For all that wanna bake the tart I wrote down the recipe below.
Apfelschaumtorte
Zutaten fuer die Fuellung:
3 Eier
6 große saeuerliche Aepfel, z.B. Boskop
1 TL Zimt
1 Zitrone
200 g Zucker
0,2 cl Orangenlikoer
50-100 g Puderzucker
Zutaten fuer den Teig:
300 g Mehl
200 g Butter
1 Prise Salz
100 g Zucker
1 Ei
Zubereitung:
Alle Zutaten für den Teig in eine Schuessel geben, verkneten und dann kuehl stellen. Fuenf Aepfel schaelen, in kleine Stuecke schneiden und mit Zimt vermischen. Zwei Drittel des Teiges fuer den Boden ausrollen, in eine Springform (20 cm) legen und die Aepfel darauf verteilen. Das restliche Teigdrittel für den Deckel ausrollen, auf die Apfelfuellung setzen und 45 Minuten bei 180 Grad im Umluftherd backen.Jetzt den letzten Apfel schaelen, in Stuecke schneiden und mit etwas Wasser, Zitronensaft un Zucker zu Apfelmus kochen. Abkuehlen lassen. Drei Eiweiss mit Puderzucker sehr steif schlagen, das Apfelmus loeffelweise vorsichtig darunter geben und mit Orangenlikoer abschmecken.Die Apfeltorte aus dem Ofen nehmen, sobald sie leicht gebraeunt ist, und die Apfel-Schaummasse darauf verteilen. Die Torte wieder in den Backofen schieben und drei bis fuenf Minuten bei 190 Grad backen.
Apple foam tart
Ingredients for filling:
3 eggs
6 big sour apples, e.g., Boskop
1 Teaspoon cinnamon
1 lemon
200 gs of sugar
0.2 centilitres of orange liqueur
50-100 gs of powdered sugar
Ingredients for the dough:
300 gs of flour
200 gs of butter
1 pinch of salt
100 gs of sugar
1 egg
Preparation:
Put all ingredients for the dough in a bowl, knead it and then place it cool. Peel the apples, cut in small pieces and mix with cinnamon. Roll out two thirds of the dough for the bottom, put in a baking form (20 cm) and distribute the apples on it. Roll out the remaining one third of the dough for the lid, place it on the apple filling and bake for 45 minutes at 180 degrees in the air circulation oven.
Now peel the last apple, cut it in pieces and cook an aplesauce with some water, lemon juice and sugar. Let it cool down. Hit three egg whites with powdered sugar very stiffly, carefully put in the applesauce teaspoon by teaspoon and taste with some orange liqueur.
Take the apple tart out of the oven, as soon as it is light brown and distribute the apple foam mass on it. Put the tart back in the oven again and bake it for another three to five minutes at 190 degrees.
